This is a standby in my household. No time to roast a chicken, but you need cooked chicken meat? Braise a bird, low and slow. Heat the oven to 275F. Put a whole chicken with neck (no other giblets) in an enameled dutch oven. Add a bit of water, a few sprigs of thyme and a bay leaf or two. Put the lid on the dutch oven, and put it in the oven for 2-1/2 hours. The result will not yield crispy-skinned roasted chicken but, instead, tender braised chicken meat and a few inches of tasty broth in the bottom.
